You can’t rely on rice, beans and freeze dried foods for emergency food storage

We live in a culture filled with disasters, both natural and man made. It is wise to have an emergency food supply to sustain your family for at least 90 days.

There are many companies taking advantage of not only prudent survival steps but also the fears many people have of a coming global apocalypse.

It is good to have buckets of beans and rice along with seeds and a good water supply. But there are companies selling freeze dried meals AS IF these e foods are the Savior of any future catastrophic event. They are also going as far as to proclaim these same families should eat this food on a daily basis.

I have two issues. The amount of sodium in these pre-packaged freeze dried meals and the very fact they are freeze dried.

You do know you are not supposed to overcook your veggies because you will kill the enzymes? In fact the kill point is 117 degrees Fahrenheit after the minutes.

Freeze drying is a heat process. The product may start out as frozen, but it is then placed in a vacuum chamber for three days and hit with an average temp of 135 degrees to get the water particles to change from ice to a vapor.

Let’s see…117 for three minutes kills enzymesand freeze drying is 135 for three days. Do the math.

In any emergency food storage plan, you must find a way of being able to supply your body with nutrients from live whole foods or you will get scurvy or become unhealthy from malnutrition.

Be carefull of one year old apples being sold as fresh

Lets go back just over a year and start with with a photograph I took with my phone at a local Albertson’s Supermarket…

…it was the first week of September 2010. The sign underneath the box of Apples states, “Fresh” right above the “Red Delicious Apples”. They are on sale. Yay! But things were not as they appeared…

We all know produce is usually picked before it is enzymatically mature to ensure firmness during its travel from the farm to the supermarket. So when I ask an audience how long ago they felt the apples had been picked, the average person would state three weeks.

So I am looking at these “Fresh” apples and was a bit confused because growing up in Washington State, I picked apples in the fall a couple of seasons. So on a hunch, I took one of the little stickers home that was on the apple, contacted the Washington State Department of Ag and found out these apples had been picked 13 MONTHS earlier, in October of 2009. Yes,13 months and yet the store calls them fresh.

So, the apples are picked, washed, waxed and put in cold storage at a temp just above freezing. Then Co2 is pumped into the cold storage facilities to keep the apples from oxygenating. Then over the year as demand continues for apples, the supermarkets can sell seasonal produce year round.

I have two points:

1) It’s that time of year and last year’s apples are about to go on sale. So be careful of buying apples that are going on sale prior to, or at the beginning of the picking season.

2) There are better methods of delivery of fruit and veggies into our bodies with the Nuriche Instafresh process.

 

Report Showing Vitamin C Can Cure Dementia, but Vitamin C From Juice is Questionable

On August 19th, the Daily Express Reporter from the UK published an article on the merits of vitamin c intake to possibly be a cure for dementia. While yes, we know the great benefits of vitamin C for overall great health and claims of healing disease, my editorial on this story has to do with the delivery system being suggested in this news article.

The researcher interviewed and Lund University in Sweden made the following statement, “Ms Mani added that while vitamin C is in fresh fruit it can be absorbed in larger quantities from fruit juice.”

This statement is not entirely accurate.

Unless you are drinking fresh squeezed orange juice, you are most likely drinking orange juice you purchased in a store, which means it has been pasteurized. Pasteurization of course, is a heat process used to kill the microorganisms and bacteria. The temperature can range from just below boiling to over 400 degrees Fahrenheit. Set that aside for a moment.

You have been told not to cook your veggies for too long because you will kill the enzymes. Specifically if you cook your veggies or fruits at 117 degrees Fahrenheit for more then three minutes you have started killing off the most important element of the fruit or veggie, the enzymes. When you compare the enzymatic kill temp with the temperatures used in pasteurizing, the math equals “Dead Juice”.

Now, when you read the label on the bottle of orange juice, you will see a listed amount of vitamin C. The problem is, while we know oranges contain vitamin C, the amount of vitamin C will vary by +/- 20% depending on many factors from the weather to other crop related issues. When you are making a statement of a certain vitamin content on a juice label, you have to prove to the FDA the content you have listed on the label. This is done by adding vitamin C in the form of ascorbic acid which just does not absorb into the body properly. It’s a shell game to sell orange juice.

Oh, and if you are drinking juice from concentrate, that has been cooked as well to reduce the water content of the juice to make it cheaper to ship. 80% of the water is cooked off, at a temp above the enzymatic kill point. The concentrate is then frozen and either distributed in stores as frozen OJ or is shipped in bulk to bottling facilities around the world. Bulk concentrate is reconstituted with filtered tap water, synthetic vitamins are added with preservatives, and then the juice is heat pasteurized before bottling. Juice from concentrate has been cooked twice.

Your best delivery system for vitamin c is to eatfruits and veggies known for vitamin c and juice yourself, providing the produce you are purchasing at the store was not picked before it was ripe and enzymaticly  mature, or treated with ethylene gas. Organic is usually the way to go. All of this can be pricy though.
